Mat was born and raised in Paris and grew up traveling and discovering Normandy and Burgundy (where his parents are from). He was exposed to the best that these regions have to offer which inspired him to become a chef. Together with his sister Laurence, Chef Mat founded Fleur de Lys Tours to share his love of his culture with others.
