Crispy roasted chick peas

Quinoa salad with pistachios, apricots and currants

Roman-style tomatoes stuffed with rice and herbs

Smoky charred broccolini with chilis over white bean puree

Minestrone verde - "green" minestrone soup loaded with green spring veggies and herbs
