The Mediterranean Diet is filled with fresh vegetables, hearty legumes and healthy oils. Learn vegan dishes that evoke the bold, sunny fllavors of the Blu Med (the menu is also Gluten-Free!)

Sample Menu:

Crispy roasted chick peas

Quinoa salad with pistachios, apricots and currants

Roman-style tomatoes stuffed with rice and herbs

Smoky charred broccolini with chilis over white bean puree

Minestrone verde - "green" minestrone soup loaded with green spring veggies and herbs

Class Duration: 2-2.5 hours
